    CONTENTS OF THE ACTIVITY

The initiative’s main objectives include the production of whole grain and wholemeal flour (including gluten-free) in stone mills, the mechanical grinding of herbs and minerals, the sale of finished products and the provision of grinding services. “Dziuni Mlyn” is aimed at reviving ancient technologies of grinding grain on stone millstones and baking bread in wood-burning ovens, which allows preserving the unique taste, nutritional value and creating truly craft products. The initiative also includes the production of cereals, flakes, pasta and a variety of flour products.

    KEY STEPS OF IMPLEMENTATION:

    • Rehabilitation and development of infrastructure. Restoration and modernization of a stone mill and the organization of a wood-fired and steam micro-bakery. Purchase of necessary equipment for the mill and bakery, including special ovens and utensils.
    • Development of agricultural production. Introducing organic farming and agroforestry methods to grow organic buckwheat, spelled wheat and specialty grains.
    • Launch of the production process for grain grinding and baking. Organization of the process of grinding grain on stone millstones to obtain whole grain and seeded unpeeled flour. Development and implementation of handmade and hearth baking technologies in wood-burning and steam ovens. Introduction of grinding and sifting technologies aimed at minimizing waste and developing additives in feed for animals and birds.
    • Marketing and sales of products. Creating a recognizable brand and developing a marketing strategy, including promotion in social networks and media. Organization of retail sales and increase in product range.
    • Social responsibility and community development. Offering grain grinding services for local farmers and bakers, developing cooperation with households and farms. Organization of exchange visits, internships and consultations on flour production and marketing, contributing to the development of a green economy and the conservation of natural and cultural heritage.

The main challenge for the development of the Dziuny Mlyn initiative is finding a balance between preserving traditional production methods and the need to adapt to modern market conditions. This balance is necessary to ensure that the project remains true to its roots while being competitive and attractive to modern consumers.

RESULTS AND IMPACT OF THE INITIATIVE

The Dziuni Mlyn initiative invests in the revival of traditional production methods to preserve the cultural heritage of the region, demonstrating a business model where economic development is harmoniously combined with the protection of nature and cultural traditions.

To ensure the supply of high-quality raw materials, LLC “Pushchanskoye Nasledie” plans to expand its activities in the field of organic farming and agroforestry. By 2026, they intend to increase the area of cultivated organic crops to 100 hectares. It is also planned to further expand production capabilities and transition to both retail and wholesale sales of flour products. The product range will be increased due to new products from local and imported raw materials.

    Beekeeping is actively developing.
